Vita-Mix Apple, Banana & Orange Blend
Prep: 10 minutes or less/ Yield: 2 servings
This drink makes a delicious breakfast side dish, dessert, or afternoon snack. If you prefer a thinner drink, use less fruit or more ice. For a rich, creamy and satisfying snack, add 1/4 cup unsweetened coconut milk to the recipe below.
Ingredients:
1 large or 2 small apples, about 10 ounces, washed, cored, peeled, and quartered:
Fuji, gala, pink lady, jonathan, jonagold, cortland, braeburn, melrose, golden delicious, ginger gold, red delicious, or other crisp sweet or tart-sweet apples
1 ripe, medium banana, peeled and halved
1 medium seedless orange, peeled
1/4-inch thick slice fresh, peeled, gingerroot or 1/4 teaspoon ground cinnamon or pie spice
1/8 teaspoon stevia extract powder or 4 to 6 drops stevia extract liquid
1 teaspoon nonalcoholic vanilla or almond extract, optional
4 to 5 large ice cubes (1 to 1 1/4 cups)
1/4 cup filtered water, optional
1. Add ingredients to Vita-Mix in the order listed. Add lid and insert tamper. Start on VARIABLE SPEED number 1 and walk up to number 10, then turn to HIGH and run until smooth, about 1 minute.
2. Pour into 2 glasses or mugs. Drink or eat with a spoon. Serve immediately.

Variations:
* Apple, Banana, Orange & Pineapple Blend: This comes from the Vita-Mix Cookbook. Combine 1/2 large or 1 small apple, 1/2 to 1 ripe banana, 1/2 of a peeled, seedless or seeded orange, 1/2 cup pineapple.
* Apple, Banana & Mango Blend: Replace 1/2 orange with 1/2 cup diced mango.
* Apple, Banana & Strawberry Blend: Replace orange with 1 cup fresh or frozen, unsweetened strawberries.
* Apple, Strawberry & Pineapple Blend: Use 1 medium to large apple, 1/2 to 1 cup hulled strawberries, and 1/2 to 1 cup diced fresh pineapple.
