Guacamole

recipe from Gluten Free Goddess Blogspot

Ingredients:
  • 2-3 ripe avocados, peeled and pitted
  • 2-3 garlic cloves, minced
  • 8 sweet grape tomatoes, chopped
  • Juice from one lime
  • Garnish: finely chopped fresh cilantro, optional

    Using a potato masher (or if you're lucky to have a mortar and pestle, grind guacamole the traditional way), smash the avocados and the garlic in a bowl till smooth. Add the lime juice, and mix until well blended. Taste for seasoning adjustments. Stir in the tomatoes; reserve a few for garnish on the top. Best served fresh. Serves 4-6
