Honey Dijon Pork Chops (or chicken in place of pork)
4 boneless chops - salt and pepper chops lightly
One medium onion sliced or chopped
Add Pork Chops to pan and fry on medium heat
1 small onion chopped
2 Cups gluten free dijon mustard
1/4 C honey
3 Tbspn stock (or water or white wine)
1 Tbspn tapicoa flour
Saute onion with 1 Tbspn olive oil until translucent. Add Pork Chops to pan and fry on medium heat. In separate bowl mix 2 cups dijon mustard GF, 1/4 Cup honey, 3 Tbsn stock (or water or white wine), 1 Tbsn tapioca flour. Whisk together. Keep turning pork chops. When chops are half done, add sauce and cook until finished (firm and no pink).
