Mizner’s Lounge Desserts gluten and dairy free at the Grand Floridian

We stopped in at the second floor Mizner’s Lounge to enjoy some of the live old timey music and to enjoy whatever treat we could find on a beautiful day. They had a delightful raspberry sorbet option that was both dairy free and gluten free. […]

Erin Mckenna inspired Chocolate Chip Banana Bread Recipe GF CF

Erin Mckenna inspired Chocolate Chip Banana Bread Recipe GF CF

I didn’t even realize that I liked banana bread until I tried Erin Mckenna’s chocolate chip banana bread in Disney Springs (pictured below). It was so delicious! Who knew that banana would benefit from chocolate (ok, maybe everyone knew that except me!)erin mckenna banana bread

Upon arriving home, I was definitely missing that flavor and came up with this recipe that is a healthy daily treat to take me back to a warm day at Disney Springs. My version does not include sugar, and it adds in protein rich almond flour to make it a more suitable option for breakfast or snack mid day. For park days, I will be happy to splurge on some of the treats from McKenna’s Bakery, though! Enjoy.

Ingredients:

  • 2 very ripe bananas
  • 1 Cup Bob Red Mill all purpose gluten free flour mix
  • 1 Cup almond flour
  • 1/8 Cup flaxseed, ground
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 3 eggs
  • 3/4 Cup Swerve Erythritol sweetener
  • 1/2 Cup avocado oil or coconut oil, melted
  • 1/2 Cup walnuts – optional

Kona Breakfast Polynesian Resort

We decided to give the Kona Cafe another try, but this time, for breakfast. We had a large group of 12, so finding a non character non buffet option took priority.  Our seating was great, and we had a fabulous time as well as wonderful […]

Pepper Market Coronado Springs Resort

Pepper Market Coronado Springs Resort

Hands down the WORST experience of our two trip. We ate there 3-4 times and each time was awful. The manager, hosts, and wait staff just refused to help us with our dietary restrictions, and the chefs were just too busy and uneducated to provide […]

Old Key West Dinner Olivia’s

Old Key West Dinner Olivia’s

We decided to try this dining establishment for something new. It was a lovely place to visit. We enjoyed the family diner feel and the atmosphere of the resort. The food was typical – salmon, burger, gluten free rolls, salads. Nothing was very good. Everything was just fine. There seemed to be some creativity lacking in the kitchen.
Still, we did enjoy ourselves and our meal.
